DAY 00: Friday, November 5, 2021 DEPARTURE FOR ISRAEL

Overnight flight from the US to Tel Aviv. 

DAY 0: Saturday, November 6, 2021 ARRIVAL IN ISRAEL

Arrival at Ben Gurion Airport on Saturday, pick-up from airport, transfer to Jerusalem.

Check-in at the Hotel Mamilla, Jerusalem (or make other arrangements).

Relax, take a walk, and get adjusted to the time difference so we can get started with a full day of activities starting Sunday morning after breakfast.

Note that Saturday night accommodations are not included in the tour program.

DAY 1: Sunday, November 7, 2021 WELCOME TO ISRAEL! (B, tasting L, D)

Opening talk by Avihai Tsabari and Aliza Green "Is there an Israeli cuisine?".

Old City Tasting Tour: view historic and religious sites of Christian and Jewish Quarters.
Tour Muslim Quarter and taste the unique flavors of this quarter.

Enjoy a beer on the rooftop of the Austrian Hospice.

Welcome dinner at Ha'Tzot, specializing in Jerusalem grill.

DAY 2: Monday, November 8, 2021 EAST & WEST IN ISRAELI CUISINE (B, tasting L, D)

Spice workshop with Israeli spice expert Shuli Madmone and Aliza Green.

Shtisl Tour: Walk the streets of the Ultra-Orthodox neighborhood of Mea Shearim and get to know the people, the food, and feel the vibrations of this life. Listen to their music, visit synagogues, and learn more about this community.

Mahane Yehuda Market: Tour this vibrant multi-ethnic market in the heart of Jerusalem while purchasing ingredients for tonight's group dinner cooking program led by Aliza.

DAY 3: Tuesday, November 8, FREE DAY TO EXPLORE (B, D)

Dinner at HaSadna Restaurant: This restaurant features fresh ingredients simply prepared and is located in the old Jerusalem railroad station. building dating from 1892.

DAY 4: Wednesday, November 10, 2021 STORIES OF THE JORDAN VALLEY (B, L, D)

Get to know food historian and expert food forager, Uri Mayer-Chizik in the Jezreel Valley for a foraging experience. Forage for wild plants, hike and cook lunch with wild plants.

Beit-Shean National Park: See mosaics, bathhouses, and a theater in one of the best-preserved Roman sites of the region.

Tavor Winery: Meet winemaker Michal Ackerman and learn how she has transformed this winery into one of Israel's best while sampling wines from their exclusive collection.

Dinner at Wood Grill Restaurant, the restaurant of Chefs Ronen Waldman and Erez Komorovsky at Mitzpe Ha'Yamim Hotel.

DAY 5: Thursday, November 11, SPIRITUAL & PHYSICAL HEIGHTS (B, L, D)

Visit Agamon HaHula: Tour this restored wetland paradise atop the northern Syrian-African Rift Valley where every year over 500 million birds stopover during migration season.

Walk in the hills to reach Goats with the Wind Farm. Lunch is prepared from food grown on the farm and features their special goat cheeses.

Druze Village Visit: Learn about the culture, customs, and delicious cuisine of the Druze people with a demonstration and tasting of sweets.

T'zfat: Discover the physical and spiritual heights of beautiful T'zfat, center since the 16th century of Kabbalah, Jewish mysticism.

Meet glass-blower-artist Chaya Sheva for a demonstration and learn about the art of working with glass and how her art connects to Judaism.

DAY 6: Friday, November 12, GALILEAN CULINARY MOSAIC (B, tasting L, D)

Tour the ancient Crusader seaport of Akko and its subterranean city in this Jewish & Muslim city.

Learn about the Arab cuisine of Akko from Akko-native and talented chef, Osama Dallal. Taste local fish and seafood right out of the water at the famed waterfront restaurant, Uri Buri.

Experience Friday night Shabbat Dinner in an Israeli home in Tel Aviv.

Overnight Nordoy Hotel in the heart of Tel Aviv.

DAY 7: Saturday, November 13, TEL AVIV SHABBAT (B, L)

Indulge in a sumptuous Shabbat brunch with food brought directly from home kitchens by local families of diverse backgrounds to a private venue.

Bauhaus Walking Tour: Explore the extensive Bauhaus architectural heritage of Tel Aviv, "the White City", which led to its designation as a UNESCO World Heritage Site.

Step into the courtyard at Teder, a favorite gathering spot for music, beer, food and people-watching.

Experience one of Tel Aviv's many fabulous restaurants for dinner (on your own). We can make recommendations.

DAY 8: Sunday, November 14, TEL AVIV OLD & NEW (B, tasting L, D))

Explore Old Jaffa with its prestigious artist studios, funky flea market, and trend-setting clothing boutiques with tastings along the way.

Tasting Tour of Lewinsky Market: Located in the old Balkan-Greek neighborhood where many food wholesalers were located, this outdoor market is replete with spice vendors, coffee shops, restaurants, and specialty food stores.

For dinner, break up into smaller groups to experience the seven species of Israeli street food at places like Sabich Tchernichovsky, Miznon, and the fabulous hummus at HaKosem.

DAY 9: Monday, November 15, FROM VISION TO REALITY (B, L, D)

Meet Gideon Ben Ami, founder of Pesia's Kitchen, which rescues prepared food and delivers it to those who need it most.

Drive to Be'er Sheva and meet Naphtali Akkum, an Ethiopian activist  and learn about Ethiopian-Jewish history and culture. Enjoy Ethiopian cuisine for lunch.

Bedouin Culture: Get to know the unique culture of the Bedouins and participate in a coffee ceremony.

Stop at Sde Boker, site of David Ben Gurion's grave, Israel's first Prime Minister who had a vision of settling the desert.

Dinner at Beresheet Hotel.

Overnight at Beresheet Hotel in Mitzpe Ramon.

DAY 10: Tuesday, November 16, THE BEAUTY OF THE DESERT (B, D)

Hike or jeep tour to the Machtesh Ramon, a uique geological formation found only in Israel and the Northern Sinai.

Free time to or relax and enjoy the beautiful Beresheet Hotel and its spa facilities and pool.

Experience a fabulous outdoor dinner in the Machtesh. Watch the taboon-baked bread and pit-roasted meats being made for you. Enjoy the meal, the atmosphere, the spirits, and the music under the stars.

DAY 11: Wedneday, November 17, TAKE ISRAEL BACK HOME (B, D)

Leisurely morning in the hotel.

Visit Naot Farm on the Negev Desert and taste some of their fabulous goat cheeses.

Review the highlights of your trip at an Israeli Cocktail Workshop and learn about the "Arak Effect," in a tasting of the local spirit of the region.

Say goodbye to your new friends at a Farewell dinner at Rama's Kitchen, founded by Rama Ben Zvi 22 years ago. This uniquely beautiful restaurant in the Jerusalem Hills serves a creative menu combining contemporary techniques and traditional Arab and Mediterranean cuisine in a not-to-be-missed experience.

Transfer to Ben Gurion Airport or make other arrangements to extend your trip.
